Low Carb Hummus and Chicken Cucumber Rolls

I am constantly trying to come up with fresh, healthy and quick lunch options to throw in my mouth on the go. These chicken, cucumber rolls are just that, I love that you can make these the night before and thrown in your handbag. They are bite sized and can be eaten all at once over over the course of a few hours in between my meetings etc. These were just the ingredients I had on hand in my fridge but you can switch these up to suit your taste or just what you have on hand. Can easily leave the chicken out and replace with more veggies for a vegetarian/vegan friendly option!

Ingredients

  • 1 medium cucumber (makes about 12 rolls)
  • ¼ cup hummus
  • 1 cooked chicken breast, shredded
  • 1 capsicum, thinly sliced 
  • 1/2 cup spinach, shredded
  • 1 tomato, cut into wedges
  • salt and pepper, for seasoning

Instructions

Slice the cucumbers with a vegetable peeler, then layer 2-3 on top of each other to create more thickness. Spread with one teaspoon on hummus and then evenly distribute the spinach, capsicum, chicken and tomato. Lastly season with salt & pepper to taste. To hold them securely in place I used a tooth pick, this step is not necessary but for nicer presentation I suggest to!
